This skillet dish combines the zesty flavors of tacos with nutrient-rich cabbage for a low-carb, high-flavor meal. It’s easy to make, customizable, and great for feeding a crowd or meal prepping.

Ingredients

  • 1 lb (450 g) ground beef
  • 1 tablespoon olive oil (optional, if needed)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 small head of cabbage (about 1.5 lbs / 700 g), shredded
  • 1 bell pepper, diced (optional)
  • 1 packet (or 2 tablespoons) taco seasoning (store-bought or homemade)
  • 1/2 cup (120 ml) water or beef broth
  • 1 cup (100 g) shredded cheese (cheddar, Monterey Jack, or your favorite)

For garnish:

  • Diced tomatoes
  • Sliced avocado
  • Chopped fresh cilantro
  • Lime wedges
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Cook the ground beef:
    • Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked. Drain excess fat if needed and set the beef aside.
  2. Sauté the aromatics:
    • In the same skillet, add olive oil if needed. Sauté the diced onion and minced garlic until fragrant, about 2-3 minutes.
  3. Cook the vegetables:
    • Add the shredded cabbage and diced bell pepper (if using) to the skillet. Stir well and cook for 5-7 minutes, until the cabbage begins to soften.
  4. Season and combine:
    • Return the ground beef to the skillet. Sprinkle the taco seasoning over the mixture and add the water or beef broth. Stir to combine and let cook for another 5 minutes, allowing the flavors to meld and the liquid to reduce.
  5. Add cheese and serve:
    • Sprinkle the shredded cheese over the top, cover, and let it melt for 1-2 minutes. Remove from heat and serve warm with your favorite garnishes.


Notes

  • To make this dish spicier, add diced jalapeños or a pinch of cayenne pepper.
  • For a vegetarian version, substitute ground beef with black beans or crumbled tofu.
  • Leftovers store well in the fridge for up to 3 days and can be reheated on the stovetop or in the microwave.
