A healthy and flavorful one-pan Ground Turkey and Zucchini Skillet that’s quick to make and packed with lean protein and veggies — perfect for a light dinner or meal prep.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium zucchinis, diced
  • 1 red bell pepper, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté for 2-3 minutes until softened.
  3. Add garlic and cook for another 30 seconds until fragrant.
  4. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.
  5. Stir in zucchini, bell pepper, Italian seasoning, paprika, salt, and pepper.
  6. Cook for another 6-8 minutes until vegetables are tender but not mushy.
  7. Sprinkle with Parmesan cheese if using and stir to combine.
  8. Garnish with fresh parsley and serve warm.

  • Great for meal prep — store in an airtight container for up to 4 days.
  • Add crushed red pepper flakes for a spicy kick.
  • Can be served over rice, quinoa, or cauliflower rice for a more filling meal.
