A lighter twist on the classic comfort food, this Ground Turkey Shepherd’s Pie features seasoned turkey and mixed vegetables topped with creamy mashed potatoes. Perfect for a wholesome family dinner.

Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup low-sodium chicken broth
  • Salt and pepper, to taste
  • 3 cups mashed potatoes (prepared ahead or store-bought)
  • 1/4 cup shredded cheddar cheese (optional)
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until softened.
  3. Add garlic and cook for 1 minute. Stir in ground turkey and cook until browned, breaking it up as it cooks.
  4. Stir in tomato paste, Worcestershire sauce, chicken broth, and mixed vegetables. Simmer for 5-7 minutes until slightly thickened. Season with salt and pepper.
  5. Spread turkey mixture evenly in a baking dish.
  6. Spoon mashed potatoes over the turkey mixture and spread evenly. Sprinkle with cheddar cheese if using.
  7. Bake for 20-25 minutes until the top is golden and filling is bubbling.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Use sweet potatoes for a different flavor and added nutrients.
  • Can be made ahead and refrigerated until ready to bake.
  • Great way to use leftover mashed potatoes.
