Ground Turkey Sweet Potato Bake is a hearty and wholesome casserole featuring lean ground turkey, tender sweet potatoes, and savory spices. It’s a nutritious, family-friendly meal perfect for meal prep or weeknight dinners.

  • 1 lb (450g) ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup shredded mozzarella or cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large skillet over medium heat, add 1 tablespoon olive oil. Sauté onions and garlic until fragrant, about 2 minutes.
  3. Add ground turkey and cook until browned, breaking it up with a spoon, about 5-7 minutes. Season with paprika, cumin, thyme, salt, and pepper.
  4. In a separate pan or microwave, partially cook sweet potatoes with 1 tablespoon olive oil until just tender, about 5-7 minutes.
  5. In the baking dish, combine cooked turkey mixture, sweet potatoes, and bell peppers. Mix well.
  6. Top with shredded cheese if using.
  7. Bake uncovered for 20-25 minutes, until the top is golden and everything is heated through.
  8. Garnish with chopped parsley and serve hot.
