1 tablespoon olive oil
1 lb ground turkey
1 small onion, chopped
2 cloves garlic, minced
1 tablespoon taco seasoning
1 (15 oz) can black beans, drained and rinsed
1 cup corn (frozen or canned)
1 (10 oz) can diced tomatoes with green chilies (like Rotel), drained
1 cup salsa
2 cups cooked rice (white or brown)
1 1/2 cups shredded cheddar or Mexican blend cheese
Optional toppings: sour cream, avocado, green onions, jalapeños, cilantro
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
In a large skillet over medium heat, heat olive oil. Add ground turkey and chopped onion. Cook until turkey is browned and onions are soft, about 6–7 minutes.
Add garlic and taco seasoning. Cook for 1 more minute, stirring frequently.
Stir in black beans, corn, diced tomatoes with green chilies, and salsa. Let everything simmer for 2–3 minutes.
Remove from heat and stir in the cooked rice.
Transfer the mixture to the prepared baking dish and top evenly with shredded cheese.
