2 tbsp soy sauce
1 tbsp sake or dry sherry (optional)
1 tbsp mirin or honey
1 tsp sesame oil
1 tbsp vegetable oil
2 cloves garlic, minced
1 tbsp fresh ginger, minced
1 cup broccoli florets
1 red bell pepper, sliced
1 medium carrot, thinly sliced
½ cup snap peas or snow peas
2 green onions, sliced
1 tsp cornstarch + 2 tbsp water (slurry)
Sesame seeds for garnish (optional)
Instructions
In a small bowl, whisk soy sauce, sake (or sherry), mirin (or honey), and sesame oil; set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey, breaking it apart; cook 5–6 minutes until no longer pink.
Add garlic and ginger; sauté for 1 minute until fragrant.
Add broccoli, bell pepper, carrot, and snap peas; stir-fry 4–5 minutes until vegetables are vibrant and tender-crisp.
Pour sauce over mixture, stirring to combine.
Stir in the cornstarch slurry; cook 1–2 minutes until sauce thickens and evenly coats ingredients.
Remove from heat; stir in sliced green onions.
Serve hot over rice or noodles, sprinkled with sesame seeds.
