This tropical fruit salad is filled with juicy pineapple, mango, kiwi, and berries, all tossed in a zesty honey-lime dressing and topped with shredded coconut for a true Hawaiian-inspired treat!

For the Honey-Lime Dressing:

  • 2 tablespoons honey (or maple syrup for vegan)
  • Juice of 1 lime
  • ½ teaspoon lime zest
  • ½ teaspoon vanilla extract (optional for extra flavor)

Optional Add-Ins:

  • ¼ cup macadamia nuts or toasted almonds for crunch
  • ½ cup mini marshmallows for a fun twist
  • ½ cup coconut yogurt for a creamy version

Instructions

  1. Prepare the Dressing:

    • In a small bowl, whisk together honey, lime juice, lime zest, and vanilla extract until well combined.
  2. Assemble the Fruit Salad:

    • In a large bowl, combine pineapple, mango, kiwi, strawberries, blueberries, and grapes.
    • Drizzle the honey-lime dressing over the fruit and toss gently to coat.
  3. Add Final Touches & Serve:

    • Right before serving, add banana slices to prevent browning.
