Healthy Breakfast Cookies are soft, chewy, and naturally sweetened cookies packed with oats, nut butter, bananas, and mix-ins like dried fruit or chocolate chips—perfect for an on-the-go morning meal.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup natural peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup ground flaxseed (optional)
  • 1/4 cup mini chocolate chips or raisins
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine mashed bananas, peanut butter, honey, and vanilla extract. Mix until smooth.
  3. Add oats, cinnamon, salt, and flaxseed if using. Stir to combine.
  4. Fold in chocolate chips, raisins, and nuts or seeds.
  5. Scoop about 2 tablespoons of dough per cookie onto the baking sheet and flatten slightly.
  6. Bake for 12–15 minutes or until edges are golden and cookies are set.
  7. Cool on a wire rack and store in an airtight container.

Notes

  • Use sunflower seed butter for a nut-free version.
  • Cookies can be frozen for up to 3 months.
  • Add shredded coconut or chopped dried fruit for variety.
