2 large eggs
1/4 cup shredded mozzarella or feta cheese
1/4 cup cherry tomatoes, halved
1/4 cup spinach or arugula
1 tbsp red bell pepper, diced
1 tsp olive oil
Salt and black pepper to taste
Red pepper flakes or fresh herbs (optional, for garnish)
Instructions
Preheat oven to 400°F (200°C).
Place the whole wheat pita or flatbread on a baking sheet.
In a small skillet, heat olive oil over medium heat and lightly scramble the eggs until just set. Season with salt and pepper.
Spread scrambled eggs evenly over the flatbread.
