A light and refreshing chicken salad made with Greek yogurt and fresh herbs, served in crisp lettuce leaves for a healthy, low-carb lunch.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup plain Greek yogurt
  • 2 tbsp mayonnaise (optional, for extra creaminess)
  • 1 stalk celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped fresh parsley or dill
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 head butter lettuce or Romaine lettuce, leaves separated
  • Sliced avocado, cherry tomatoes, or extra herbs for garnish (optional)

Instructions

  1. In a large bowl, combine Greek yogurt, mayonnaise (if using), Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir until smooth.
  2. Add shredded chicken, celery, red onion, and fresh herbs. Mix until the chicken is well coated.
  3. Adjust seasoning with additional salt and pepper to taste.
  4. Spoon the chicken salad into individual lettuce leaves.
  5. Top with sliced avocado, cherry tomatoes, or extra herbs if desired. Serve immediately.

Notes

  • Use rotisserie chicken for an easy shortcut.
  • Store leftover chicken salad in an airtight container in the refrigerator for up to 3 days.
  • Add chopped apples or grapes for a sweet crunch.
