Herbed skirt steak is a flavorful and tender grilled steak dish marinated in a blend of fresh herbs, garlic, and olive oil, perfect for a quick and satisfying meal.

Ingredients

  • 1.5 lbs skirt steak
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix olive oil, garlic, parsley, rosemary, thyme, lemon juice, salt, and pepper.
  2. Place skirt steak in a resealable bag or shallow dish and pour marinade over it. Seal and refrigerate for at least 1 hour, or up to 8 hours.
  3. Preheat grill to high heat.
  4. Remove steak from marinade and let excess drip off. Grill for 3–4 minutes per side for medium-rare, or until desired doneness.
  5. Transfer steak to a cutting board and let rest for 5 minutes before slicing thinly against the grain.
  6. Serve with your choice of sides such as roasted vegetables or a fresh salad.

Notes

  • Don’t overcook skirt steak—it’s best served medium-rare to medium for optimal tenderness.
  • Fresh herbs offer the best flavor, but dried herbs can be used in a pinch (use 1/3 the amount).
  • Letting the steak rest before slicing helps retain its juices.
