For the Beef:
½ lb (225g) beef sirloin or flank steak, thinly sliced
1 tbsp soy sauce
1 tsp cornstarch
1 tsp sesame oil
For the Sauce:
¼ cup hoisin sauce
2 tbsp soy sauce
1 tbsp oyster sauce (or extra soy sauce for a vegan option)
1 tbsp rice vinegar
1 tbsp honey or brown sugar
½ tsp red pepper flakes (optional, for spice)
¼ cup water
For the Stir-Fry:
8 oz (225g) rice noodles or lo mein noodles
1 tbsp vegetable oil
3 cloves garlic, minced
1 tsp ginger, minced
1 red bell pepper, thinly sliced
1 cup snap peas (or broccoli, carrots, or bok choy)
2 green onions, sliced
1 tbsp sesame seeds (for garnish)
Instructions
Marinate the beef: In a bowl, toss the beef slices with soy sauce, cornstarch, and sesame oil. Let sit for 10 minutes.
Prepare the noodles: Cook the noodles according to package instructions. Drain and set aside.
Make the sauce: In a small bowl, whisk together hoisin sauce, soy sauce, oyster sauce, rice vinegar, honey, red pepper flakes, and water. Set aside.
Cook the beef: Heat vegetable oil in a large pan or wok over medium-high heat. Add the beef and sear for 2-3 minutes until browned. Remove from the pan and set aside.
Stir-fry the veggies: In the same pan, add garlic, ginger, bell pepper, and snap peas. Stir-fry for 2-3 minutes until slightly tender.
Combine everything: Add the cooked noodles, beef, and sauce to the pan. Toss everything together for 2 minutes until well coated and heated through.
Serve & garnish: Top with green onions and sesame seeds. Enjoy!
Notes
Swap beef for chicken, shrimp, or tofu for a different protein.
For a spicy kick, add Sriracha or chili oil to the sauce.
Gluten-free? Use tamari instead of soy sauce and gluten-free noodles.
