Ingredients

Scale

For the Pie Crust:

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 68 tbsp ice water

For the Apple Filling:

  • 6 cups apples, peeled, cored, and sliced (Granny Smith, Honeycrisp, or Fuji)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
  • 1 ½ tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 tbsp cornstarch or flour
  • 1 tbsp unsalted butter, cut into small pieces

For the Egg Wash:

  • 1 egg
  • 1 tbsp milk or water

Instructions

1. Make the Pie Crust:

  1. In a large bowl, whisk together flour, salt, and sugar.
  2. Add cold cubed butter and use a pastry cutter or fork to mix until the dough resembles coarse crumbs.
  3. Slowly add ice water, 1 tbsp at a time, mixing just until the dough holds together.
  4. Divide into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

2. Prepare the Apple Filling:

  1. In a large bowl, toss sliced apples with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and cornstarch (or flour).
  2. Let the mixture sit for 15-20 minutes to release juices.

3. Assemble the Pie:

  1. Preheat oven to 375°F (190°C).
  2. Roll out one dough disk on a floured surface to fit a 9-inch pie pan. Place it in the pan and trim excess edges.
  3. Pour the apple filling into the crust and dot with small pieces of butter.
  4. Roll out the second dough disk and place over the apples. Seal and crimp the edges. Cut a few slits in the top for steam to escape.

4. Bake the Pie:

  1. In a small bowl, whisk the egg and milk (or water) to make an egg wash. Brush over the crust for a golden finish.
  2. Bake for 50-60 minutes or until the crust is golden brown and the filling is bubbling.
  3. If the edges brown too quickly, cover them with aluminum foil.

5. Cool & Serve:

  1. Let the pie cool for at least 2 hours before slicing to allow the filling to set.
  2. Serve warm or at room temperature with ice cream or whipped cream. Enjoy!
