Homemade chocolate turtles are a delicious combination of crunchy pecans, gooey caramel, and rich chocolate. These bite-sized treats are perfect for gifting or enjoying during the holidays. With just a few ingredients, you can create this classic candy at home in no time.

Ingredients

  • 200 g (2 cups) pecan halves, lightly toasted
  • 200 g (7 oz) soft caramels (store-bought or homemade)
  • 2 tablespoons heavy cream
  • 200 g (7 oz) semi-sweet or milk chocolate, chopped
  • 1 teaspoon coconut oil or vegetable shortening (optional, for smoother chocolate)
  • Sea salt flakes (optional, for garnish)


Instructions

  1. Prepare the pecans:
    • Line a baking sheet with parchment paper or a silicone mat.
    • Arrange the pecans in clusters of 3 to 4 halves, resembling a turtle shape (head, legs, and tail). Leave space between each cluster.
  2. Melt the caramel:
    • In a microwave-safe bowl, combine the soft caramels and heavy cream. Microwave in 20-second intervals, stirring in between, until the caramel is fully melted and smooth.
    • Spoon about 1 teaspoon of caramel over the center of each pecan cluster, ensuring the pecans stick together. Allow the caramel to set for about 10 minutes.
  3. Melt the chocolate:
    • Melt the chopped chocolate using a double boiler or microwave (in 20-second intervals, stirring each time). If desired, stir in coconut oil or vegetable shortening for a glossy finish.
  4. Coat the clusters with chocolate:
    • Spoon or drizzle the melted chocolate over each caramel-pecan cluster, covering the caramel completely.
    • Sprinkle with sea salt flakes if desired.
  5. Set the turtles:
    • Let the chocolate turtles cool at room temperature for about 1 hour, or refrigerate them for 15–20 minutes to set faster.
  6. Serve or store:
    • Once set, transfer the turtles to an airtight container. They can be stored at room temperature for up to 1 week or in the refrigerator for up to 2 weeks.


Notes

  • Toasting the pecans enhances their flavor and crunch. Spread them on a baking sheet and bake at 180°C (350°F) for 8–10 minutes.
  • You can use dark chocolate for a less sweet version or white chocolate for a fun twist.
  • Adjust the size of the clusters to make smaller or larger turtles.
