This Homemade Cinnamon Toast Crunch is a fun and delicious cereal you can make from scratch, featuring crispy baked cinnamon-sugar squares with a hint of vanilla. Perfect for breakfast or a nostalgic snack.

  • 1 cup all-purpose flour
  • 1/4 cup whole wheat flour (optional, for extra texture)
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 4 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 23 tbsp milk (as needed for dough)
  • For topping: 2 tbsp granulated sugar + 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together all-purpose flour, whole wheat flour (if using), sugar, cinnamon, and salt.
  3. Stir in melted butter and vanilla extract. Add milk 1 tablespoon at a time until a soft dough forms.
  4. Roll out dough between two sheets of parchment paper to about 1/8 inch thickness.
  5. Remove top parchment and use a knife or pizza cutter to score dough into small squares.
  6. Sprinkle cinnamon-sugar topping evenly over the dough.
  7. Transfer the parchment with dough to the baking sheet and bake for 12–15 minutes or until golden and crisp.
  8. Let cool completely before breaking apart into squares. Store in an airtight container.
