Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/2 cup powdered sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother chocolate)
  • Mini cupcake liners

Instructions

  1. Line a mini muffin tin with paper liners.
  2. In a bowl, mix peanut butter, melted butter, and brown sugar until smooth.
  3. Add powdered sugar and stir until a thick dough forms.
  4. Roll small balls of the peanut butter mixture and press into the bottom of each liner, flattening slightly.
  5. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  6. Pour melted chocolate over each peanut butter base, spreading to cover completely.
  7. Chill in the refrigerator for at least 1 hour until set.

Notes

  • Store in an airtight container in the fridge for up to a week.
