1 lb carrots, peeled and cut into 1½-inch pieces
1 tbsp olive oil
1½ tbsp honey
1½ tbsp balsamic vinegar
2 cloves garlic, minced
1 tsp dried thyme
1 tsp lemon juice
¼ tsp salt
¼ tsp black pepper
Fresh parsley, chopped (for garnish, optional)
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss carrots with olive oil, salt, and pepper in a large bowl until well coated.
Roast carrots on the baking sheet for 25–30 minutes, or until tender and starting to brown.
