Ingredients

Scale
  • 1 lb carrots, peeled and cut into 1½-inch pieces

  • 1 tbsp olive oil

  • 1½ tbsp honey

  • 1½ tbsp balsamic vinegar

  • 2 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp lemon juice

  • ¼ tsp salt

  • ¼ tsp black pepper

  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Toss carrots with olive oil, salt, and pepper in a large bowl until well coated.

  3. Roast carrots on the baking sheet for 25–30 minutes, or until tender and starting to brown.

  4. Make the glaze: In a small bowl, mix honey, balsamic vinegar, garlic, thyme, and lemon juice.

  5. Glaze carrots: Remove the tray from the oven, drizzle the glaze over the carrots, and toss to coat.

  6. Roast again for 5 more minutes until the glaze thickens and caramelizes slightly.

  7. Serve warm, garnished with chopped parsley if desired.

Notes

  • Use rainbow carrots for a colorful twist.

  • If you prefer softer carrots, slice them thinner.

  • Add a pinch of red pepper flakes for a little heat.
