2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk, cold
2 tablespoons honey
2 tablespoons melted butter (for glaze)
1 tablespoon honey (for glaze)
Instructions
Preheat oven to 425°F (220°C).
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Cut in the cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
Stir in cold buttermilk and 2 tablespoons honey just until combined.
Turn dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick rectangle.
Cut biscuits using a round cutter and place on a baking sheet lined with parchment paper.
Bake for 12-15 minutes or until golden brown.
While biscuits are baking, mix melted butter and 1 tablespoon honey for the glaze.
Brush hot biscuits with honey butter glaze immediately after removing from the oven.
Serve warm.
Notes
For extra flaky biscuits, freeze butter cubes for 10 minutes before using.
Do not overmix the dough to avoid tough biscuits.
