  • 2 boneless, skinless chicken breasts
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup honey
  • 1 tablespoon hot sauce (or more to taste)
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup ranch or blue cheese dressing
  • Oil for frying

Instructions

  1. Pound chicken breasts to even thickness and soak in buttermilk for at least 30 minutes (or overnight).
  2. In a shallow bowl, mix flour, salt, pepper, and cayenne. Dredge the chicken in the flour mixture, coating evenly.
  3. Heat oil in a skillet over medium-high heat. Fry chicken for 4–5 minutes per side or until golden brown and fully cooked. Drain on paper towels.
  4. In a small saucepan or microwave-safe bowl, combine honey and hot sauce. Heat gently and stir until blended.
  5. Brush or drizzle the honey hot mixture over the fried chicken.
  6. Assemble the salad: in a large bowl or plate, arrange greens, tomatoes, cucumber, and red onion.
  7. Slice the hot honey chicken and place on top. Drizzle with ranch or blue cheese dressing before serving.
