Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 1/4 cup chopped pecans or almonds (optional)

For the honey mustard dressing:

  • 1/4 cup Dijon mustard
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar or lemon juice
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6–7 minutes per side, or until fully cooked and golden brown. Let rest, then slice.
  2. In a small bowl or jar, whisk together Dijon mustard, honey, olive oil, vinegar, salt, and pepper until smooth. Set aside.
  3. In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, red onion, carrots, and any optional toppings like cheese or nuts.
  4. Top with sliced chicken and drizzle with honey mustard dressing.
  5. Toss gently before serving or serve dressing on the side.

  • Chicken can be grilled, pan-seared, or baked based on preference.
  • Make the dressing in advance and refrigerate for up to 5 days.
