This Honeycrisp Apple Broccoli Salad is a crisp, refreshing, and slightly sweet dish packed with crunchy broccoli, juicy apples, crunchy nuts, and a tangy homemade dressing. It’s the perfect side dish for fall gatherings, BBQs, or a light lunch!

For the Salad:

  • 4 cups fresh broccoli florets, chopped
  • 1 large Honeycrisp apple, diced
  • ½ cup shredded carrots
  • ½ cup dried cranberries
  • ½ cup chopped pecans (or almonds or walnuts)
  • ¼ cup red onion, finely diced
  • ½ cup shredded sharp cheddar cheese (optional)
  • 4 slices bacon, cooked and crumbled (optional)

For the Dressing:

  • ½ cup mayonnaise (or Greek yogurt for a lighter option)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

 


Instructions

1. Make the Dressing:

  1. In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper.
  2. Taste and adjust seasoning if needed. Set aside.

2. Assemble the Salad:

  1. In a large bowl, combine broccoli, diced apple, shredded carrots, dried cranberries, pecans, red onion, and cheddar cheese (if using).
  2. Pour the dressing over the salad and toss until well coated.
  3. Sprinkle with crumbled bacon if using.

3. Chill & Serve:

  1. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  2. Serve chilled and enjoy!

Notes

  • Make it Vegan: Use vegan mayo and omit cheese and bacon.
  • Make it Crunchier: Add sunflower seeds or pumpkin seeds.
  • Storage: Keeps well in the fridge for up to 3 days in an airtight container.
