Hot Chocolate Cookies are soft, chewy chocolate cookies infused with rich cocoa flavor and topped with gooey marshmallows — just like your favorite winter drink in dessert form.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually mix dry ingredients into the wet ingredients until just combined.
  6. Fold in chocolate chips and mini marshmallows (reserve a few marshmallows for topping).
  7. Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them about 2 inches apart.
  8. Press a few extra marshmallows on top of each cookie.
  9. Bake for 9–11 minutes, until edges are set and centers are still soft.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra gooeyness, press additional marshmallows on top during the last 2 minutes of baking.
  • Chill the dough for thicker cookies.
  • Store in an airtight container for up to 5 days or freeze for later.
