1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
1 cup mini marshmallows
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
Gradually mix dry ingredients into the wet ingredients until just combined.
Fold in chocolate chips and mini marshmallows (reserve a few marshmallows for topping).
Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them about 2 inches apart.
Press a few extra marshmallows on top of each cookie.
Bake for 9–11 minutes, until edges are set and centers are still soft.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra gooeyness, press additional marshmallows on top during the last 2 minutes of baking.
Chill the dough for thicker cookies.
Store in an airtight container for up to 5 days or freeze for later.
