Ingredients

  • 1 English cucumber, diced

  • 1 green bell pepper, diced

  • 1/2 small red onion, finely chopped (optional)

  • 1/2 cup banana pepper rings, chopped

  • 23 hard-boiled eggs, chopped

  • 1/4 cup feta cheese (optional, crumbled)

  • 2 tablespoons olive oil

  • 1 tablespoon white vinegar or apple cider vinegar

  • 1 teaspoon dried oregano

  • Salt and black pepper, to taste

  • Red pepper flakes (optional, for heat)

Instructions

  • Chop all ingredients: Dice the cucumber, green bell pepper, onion (if using), banana peppers, and hard-boiled eggs. Add to a large bowl.

  • Add feta: Sprinkle in crumbled feta if using.

  • Make the dressing: In a small bowl, whisk together olive oil, vinegar, oregano, salt, pepper, and red pepper flakes.

 

  • Toss and serve: Pour dressing over the salad and toss until well mixed. Serve immediately or chill for 15–20 minutes for extra flavor.
