2 lbs baby potatoes or Yukon Gold potatoes, halved if large
1 cup water
1 tsp salt
1 tbsp olive oil (optional, for flavor)
Fresh herbs for garnish (optional)
Instructions
Wash and scrub the potatoes. Cut larger ones in half to ensure even cooking.
Pour 1 cup of water into the Instant Pot and place the trivet inside.
Add the potatoes on top of the trivet. Sprinkle with salt and drizzle with olive oil if using.
Close the lid, set the valve to sealing, and cook on high pressure for 7 minutes.
Allow a natural pressure release for 5 minutes, then do a quick release.
Carefully remove the lid and take out the potatoes. Garnish with fresh herbs if desired and serve warm.
Notes
Adjust cook time to 10 minutes for larger potatoes or firmer texture.
Great for meal prep or using in potato salads.
You can toss with butter, garlic, or seasoning after cooking for extra flavor.
