  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup Irish whiskey
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Cook chicken until golden brown and cooked through, about 5-7 minutes per side; remove and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds.
  5. Carefully add Irish whiskey, scraping up any browned bits from the bottom of the pan.
  6. Stir in chicken broth and bring to a simmer.
  7. Reduce heat to low and whisk in heavy cream and Dijon mustard.
  8. Simmer until the sauce thickens slightly, about 5 minutes.
  9. Return the chicken to the skillet and coat with the sauce.
  10. Garnish with chopped parsley and serve hot.
