These mini pecan pie bites are made with flaky puff pastry, a gooey pecan filling, and a touch of sweetness. They’re easy to make and will be a hit at any gathering.

  • 1 sheet frozen puff pastry, thawed
  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (60 ml) light corn syrup or maple syrup
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup (60 g) chopped pecans

Instructions

  • Preheat the oven:
    • Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners.
  • Prepare the puff pastry:
    • Roll out the thawed puff pastry on a lightly floured surface to smooth it out. Cut the pastry into 2-inch squares. Press each square into the cups of the prepared mini muffin tin.
  • Make the filling:
    • In a medium bowl, whisk together the brown sugar, corn syrup (or maple syrup), melted butter, egg, vanilla extract, and cinnamon (if using) until smooth. Stir in the chopped pecans.
  • Fill the pastry cups:
    • Spoon about 1 tablespoon of the pecan filling into each pastry cup, being careful not to overfill. The filling will puff up slightly as it bakes.
  • Bake:
    • Bake for 15-18 minutes, or until the filling is set and the puff pastry is golden brown.
  • Cool and serve:
    • Allow the pecan pie bites to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Storage: Store the bites in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
  • Toppings: For extra indulgence, drizzle with melted chocolate or a dusting of powdered sugar.
  • Make-ahead: Assemble the bites and refrigerate them uncooked for up to 1 day, then bake just before serving.
