Ingredients
Scale
1 sheet frozen puff pastry, thawed
1/2 cup (100 g) brown sugar
1/4 cup (60 ml) light corn syrup or maple syrup
2 tablespoons unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
1/2 cup (60 g) chopped pecans
Instructions
Preheat the oven:
Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners.
Prepare the puff pastry:
Roll out the thawed puff pastry on a lightly floured surface to smooth it out. Cut the pastry into 2-inch squares. Press each square into the cups of the prepared mini muffin tin.
Make the filling:
In a medium bowl, whisk together the brown sugar, corn syrup (or maple syrup), melted butter, egg, vanilla extract, and cinnamon (if using) until smooth. Stir in the chopped pecans.
Fill the pastry cups:
Spoon about 1 tablespoon of the pecan filling into each pastry cup, being careful not to overfill. The filling will puff up slightly as it bakes.
Bake:
Bake for 15-18 minutes, or until the filling is set and the puff pastry is golden brown.
Cool and serve:
Allow the pecan pie bites to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
Notes
Storage: Store the bites in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
Toppings: For extra indulgence, drizzle with melted chocolate or a dusting of powdered sugar.
Make-ahead: Assemble the bites and refrigerate them uncooked for up to 1 day, then bake just before serving.
