2 cups almond flour
1 cup granulated sugar
2 large egg whites
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract
Powdered sugar for dusting
Whole blanched almonds (optional, for topping)
Instructions
Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
In a bowl, mix almond flour and granulated sugar together.
In a separate bowl, beat egg whites until soft peaks form.
Gently fold the beaten egg whites into the almond flour mixture along with almond and vanilla extracts until a sticky dough forms.
Scoop tablespoon-sized amounts of dough and roll into balls. Roll each ball in powdered sugar and place on the prepared baking sheet.
Top each cookie with a whole almond if using.
Bake for 20–25 minutes, or until lightly golden and cracked on top.
Cool completely before serving. Store in an airtight container.
Notes
Do not overbake; cookies should be chewy in the center.
You can use a piping bag for a neater shape if desired.
Great for gluten-free diets since they contain no flour or leaveners.
