Italian Sausage and Cabbage Soup is a rustic and comforting soup made with hearty sausage, tender cabbage, vegetables, and flavorful herbs in a savory broth. It’s easy to prepare, budget-friendly, and perfect for chilly evenings.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy), casing removed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups green cabbage, chopped
  • 6 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove excess grease if necessary.
  2. Add onion and garlic; sauté for 2–3 minutes until fragrant.
  3. Add carrots and celery; cook for another 5 minutes until beginning to soften.
  4. Stir in chopped cabbage, chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil.
  5. Reduce heat to low and simmer for 20–25 minutes, or until vegetables are tender.
  6. Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.

Notes

  • For a lighter version, use chicken or turkey sausage.
  • Add cooked pasta or white beans for extra heartiness.
  • Leftovers taste even better the next day and can be frozen.
