1 lb Italian sausage (mild or spicy, casings removed)
1 medium onion (diced)
2 cloves garlic (minced)
2 carrots (peeled and sliced)
2 celery stalks (sliced)
1 red bell pepper (diced)
1 can (15 oz) diced tomatoes
2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
4 cups low-sodium chicken broth
1 tsp Italian seasoning
1/4 tsp crushed red pepper flakes (optional)
Salt and pepper to taste
2 cups fresh spinach or chopped kale (optional)
Fresh parsley and grated Parmesan for garnish (optional)
Heat olive oil in a large pot or Dutch oven over medium heat.
Add sausage and cook, breaking it up with a spoon, until browned and cooked through—about 6–7 minutes.
