Italian Tortellini Salad is a vibrant and flavorful pasta salad made with cheese tortellini, fresh vegetables, salami, and a zesty Italian dressing—perfect for picnics, potlucks, or a light meal.

  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoni or salami slices, chopped
  • 1/2 cup mozzarella balls or cubes
  • 1/3 cup grated Parmesan cheese
  • 3/4 cup Italian dressing
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, olives, pepperoni, mozzarella, and Parmesan cheese.
  3. Pour Italian dressing over the salad and toss gently to coat.
  4. Season with salt and pepper to taste.
  5. Garnish with chopped parsley.
  6. Chill for at least 30 minutes before serving for best flavor.
