These Jalapeño Popper Egg Rolls take all the creamy, cheesy, and spicy goodness of jalapeño poppers and wrap them in a crispy, golden egg roll shell. Perfect for parties, snacks, or game day appetizers, they’re a crowd-pleasing favorite!

Ingredients

  • 8 egg roll wrappers
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 4 jalapeños, finely diced (seeds removed for less heat)
  • 4 slices cooked bacon, crumbled (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1 egg, beaten (for sealing wrappers)
  • Oil for frying (vegetable or canola)

For Serving (Optional):

  • Ranch dressing
  • Sour cream
  • Chipotle mayo

Instructions

  1. Prepare the Filling:
    • In a medium bowl, mix the softened cream cheese, cheddar cheese, Monterey Jack cheese, diced jalapeños, bacon (if using), garlic powder, onion powder, salt, and pepper until well combined.
  2. Assemble the Egg Rolls:
    • Lay an egg roll wrapper on a clean surface with one corner facing you (like a diamond shape).
    • Place about 2 tablespoons of the filling in a horizontal line near the bottom corner of the wrapper.
    • Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Brush the top corner with beaten egg to secure the wrapper. Repeat with remaining wrappers and filling.
  3. Fry the Egg Rolls:
    • Heat about 2 inches of oil in a deep skillet or pot to 350°F (175°C).
    • Fry the egg rolls in batches, turning occasionally, for 2–3 minutes or until golden brown and crispy.
    • Remove with a slotted spoon and drain on a paper towel-lined plate.
  4. Serve:
    • Serve warm with ranch dressing, sour cream, or your favorite dipping sauce.


Notes

  • For a baked version, brush the egg rolls with oil, place them on a baking sheet, and bake at 400°F (200°C) for 15–18 minutes, flipping halfway through.
  • Air fryer option: Lightly spray the egg rolls with cooking spray and cook at 375°F (190°C) for 10–12 minutes, flipping halfway.
  • Add diced green onions or chopped cilantro to the filling for extra flavor.
