Jamaican Jerk Sauce is a bold, spicy, and aromatic marinade made with a blend of herbs, spices, and peppers, perfect for grilling or roasting meats, seafood, and vegetables.

Ingredients

  • 4 green onions, chopped
  • 2 Scotch bonnet peppers, seeded and chopped
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • Salt and pepper to taste

Instructions

  1. Place all ingredients into a blender or food processor.
  2. Blend until smooth, scraping down sides as needed.
  3. Taste and adjust seasoning if necessary.
  4. Use immediately as a marinade or store in an airtight container in the refrigerator for up to 1 week.

Notes

  • For less heat, use only one Scotch bonnet pepper or substitute with a milder pepper.
  • This sauce works great for chicken, pork, shrimp, or tofu.
  • Marinate meats for at least 2 hours, preferably overnight, for deeper flavor.
  • Freeze leftover sauce in ice cube trays for easy use later.
