4 green onions, chopped
2 Scotch bonnet peppers, seeded and chopped
1 tablespoon fresh thyme leaves
2 teaspoons ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon brown sugar
1/4 cup soy sauce
2 tablespoons lime juice
2 tablespoons vegetable oil
3 cloves garlic, minced
1-inch piece fresh ginger, grated
Salt and pepper to taste
Instructions
Place all ingredients into a blender or food processor.
Blend until smooth, scraping down sides as needed.
Taste and adjust seasoning if necessary.
Use immediately as a marinade or store in an airtight container in the refrigerator for up to 1 week.
Notes
For less heat, use only one Scotch bonnet pepper or substitute with a milder pepper.
This sauce works great for chicken, pork, shrimp, or tofu.
Marinate meats for at least 2 hours, preferably overnight, for deeper flavor.
Freeze leftover sauce in ice cube trays for easy use later.
