This Jammy Eggs with Chili Butter & Garlic Yogurt dish is a creamy, spicy, and savory delight, inspired by Turkish-style eggs (Çılbır). Featuring soft, jammy eggs, velvety garlic yogurt, and a rich, spiced chili butter, this dish is perfect for breakfast, brunch, or a quick, satisfying meal!

For the Jammy Eggs:

  • 4 large eggs
  • Water & ice (for an ice bath)

For the Garlic Yogurt:

  • 1 cup Greek yogurt (full-fat for best flavor!)
  • 1 clove garlic, finely grated or minced
  • ½ tsp salt (adjust to taste!)
  • *1 tbsp lemon juice (optional, for brightness!)

For the Chili Butter:

  • 3 tbsp unsalted butter (or use olive oil for a lighter version!)
  • 1 tsp red pepper flakes (Aleppo, chili flakes, or crushed red pepper!)
  • ½ tsp smoked paprika (adds depth!)
  • ½ tsp cumin (optional, for extra warmth!)

For Serving:

  • Fresh dill or parsley (for garnish)
  • Toasted sourdough, pita, or naan (for dipping!)
  • Black pepper (to taste)

Instructions

Step 1: Make the Jammy Eggs

  1. Bring a pot of water to a boil over medium-high heat.
  2. Gently lower eggs into boiling water using a spoon.
  3. Boil for 6 ½ to 7 minutes for a jammy, soft yolk.
  4. Transfer eggs to an ice bath and let sit for 5 minutes.
  5. Peel carefully and set aside.

Step 2: Prepare the Garlic Yogurt

  1. In a bowl, mix Greek yogurt, grated garlic, and salt.
  2. Add lemon juice if using.
  3. Stir until smooth and set aside.

Step 3: Make the Chili Butter

  1. In a small pan, melt butter over low heat.
  2. Stir in red pepper flakes, smoked paprika, and cumin.
  3. Cook for 1-2 minutes, until fragrant and slightly foamy.
  4. Remove from heat and set aside.

Step 4: Assemble & Serve

  1. Spread the garlic yogurt on a plate.
  2. Slice the jammy eggs in half and place on top.
  3. Drizzle generously with chili butter.
  4. Sprinkle with fresh dill or parsley and black pepper.
  5. Serve with warm toasted bread for dipping!
