3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1 package (3 oz) Jello gelatin (any flavor)
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Additional Jello powder or sugar for rolling (optional)
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter, sugar, and dry Jello powder until light and fluffy.
Add egg and vanilla extract, and beat until well combined.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until dough forms.
Roll dough into 1-inch balls and optionally roll in more Jello powder or sugar.
Place on baking sheet about 2 inches apart and flatten slightly with a glass or fork.
Bake for 8–10 minutes, or until edges are just set. Do not overbake.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Use different Jello flavors for various colors and tastes.
Chill dough for 20 minutes if too sticky to roll.
Great for parties, holidays, and baking with kids.
