Jello Cookies are soft, colorful sugar cookies flavored with fruity gelatin powder—easy to make and fun for kids and holidays with endless flavor and color combinations.

Ingredients

  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 package (3 oz) Jello gelatin (any flavor)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional Jello powder or sugar for rolling (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, sugar, and dry Jello powder until light and fluffy.
  3. Add egg and vanilla extract, and beat until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until dough forms.
  5. Roll dough into 1-inch balls and optionally roll in more Jello powder or sugar.
  6. Place on baking sheet about 2 inches apart and flatten slightly with a glass or fork.
  7. Bake for 8–10 minutes, or until edges are just set. Do not overbake.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Use different Jello flavors for various colors and tastes.
  • Chill dough for 20 minutes if too sticky to roll.
  • Great for parties, holidays, and baking with kids.
