Jello Divinity Candy is a colorful twist on the classic divinity candy, using flavored gelatin to add fruity flavor and vibrant color. Light, fluffy, and perfect for holidays or special occasions.

  • 1 package (3 oz) flavored Jello (any flavor)
  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. In a saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar is dissolved.
  2. Attach a candy thermometer and continue cooking without stirring until the temperature reaches 260°F (hard ball stage).
  3. While the syrup is cooking, beat egg whites in a large bowl until stiff peaks form.
  4. When syrup reaches 260°F, slowly pour it in a thin stream into the egg whites while beating constantly.
  5. Add the dry Jello powder and vanilla extract, and continue beating until the mixture holds its shape and becomes less glossy.
  6. Fold in chopped nuts if using.
  7. Drop by spoonfuls onto wax paper and let sit at room temperature until set, about 1-2 hours.

  • Choose different Jello flavors for various colors and tastes.
  • Work quickly, as the candy sets fast once beaten to the right consistency.
  • Store in an airtight container at room temperature.
