For the steak:

  • 4 steaks (ribeye, sirloin, or filet mignon)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, smashed
  • Salt and freshly ground black pepper, to taste

For the creamy garlic sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • ½ cup (50 g) grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the steaks:
    • Remove the steaks from the fridge 30 minutes before cooking to allow them to come to room temperature. Pat them dry with paper towels and season generously with salt and black pepper on both sides.
  2. Sear the steaks:
    • Heat a large skillet or cast-iron pan over medium-high heat. Add olive oil and let it heat until shimmering.
    • Add the steaks to the pan and sear for 3-4 minutes on each side for medium-rare (adjust timing for desired doneness).
    • Add the butter and smashed garlic cloves to the pan. Baste the steaks with the melted butter using a spoon.
    • Remove the steaks from the pan, cover loosely with foil, and let them rest for 5-7 minutes.
  3. Make the creamy garlic sauce:
    • In the same pan, reduce the heat to medium and add the butter. Once melted, sauté the minced garlic for 1-2 minutes until fragrant.
    • Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, Dijon mustard, and Italian seasoning. Cook for 3-4 minutes, stirring frequently, until the sauce thickens slightly.
    • Taste and adjust seasoning with salt and pepper.
  4. Serve:
    • Place the steaks on plates and spoon the creamy garlic sauce over the top. Garnish with chopped parsley and serve immediately.

Notes

  • Use a meat thermometer for precise doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  • Serve with mashed potatoes, roasted vegetables, or a crisp green salad for a complete meal.
