Ingredients

Scale

  • 2 boneless, skinless chicken breasts (about 68 oz each)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning (or dried oregano)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced (optional)
  • Juice of ½ lemon (optional)
  • 1 tablespoon fresh parsley or thyme, chopped (for garnish)

Instructions

  • Prepare the Chicken:

    • Pat chicken dry with paper towels (this helps get a nice sear).
    • Season both sides with salt, black pepper, garlic powder, paprika, and Italian seasoning.
  • Heat the Pan:

    • Heat olive oil in a large skillet over medium-high heat.
    • Once hot, add chicken breasts smooth side down.
  • Sear the Chicken:

    • Cook for 5-6 minutes, without moving, until golden brown.
    • Flip, reduce heat to medium, and cook for another 5-7 minutes.
    • Add butter and minced garlic (if using) to the pan in the last 2 minutes, spooning it over the chicken.
  • Check for Doneness:

    • Chicken is done when the internal temperature reaches 165°F (75°C).
    • Remove from heat and squeeze fresh lemon juice over the top for extra flavor.

  • Rest & Serve:

    • Let chicken rest for 5 minutes before slicing.
    • Garnish with fresh parsley or thyme and serve with your favorite sides.

Notes

  • Want extra juiciness? Pound the chicken to an even thickness before cooking.
  • For a creamy twist, make a quick pan sauce with broth, cream, and Parmesan.
  • Pair with sides like roasted veggies, mashed potatoes, or a fresh salad.
