This festive July Cookie Cake is the perfect sweet treat for your summer celebrations! It’s a soft, chewy cookie baked into a cake and decorated with red, white, and blue sprinkles or frosting. Great for barbecues, picnics, and Fourth of July parties, this easy dessert is fun to make and even more fun to eat.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup white chocolate chips
  • 1/4 cup red, white, and blue sprinkles (plus extra for topping)
  • Frosting for decorating (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9-inch round cake pan or line with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
  5. Fold in white chocolate chips and sprinkles.
  6. Press dough evenly into the prepared pan.
  7. Bake for 18–22 minutes or until edges are golden and center is set. Do not overbake.
  8. Allow to cool completely in the pan before decorating with frosting and additional sprinkles.

Notes

  • Use gel food coloring in frosting to match the patriotic theme.
  • For easy removal, use a springform pan or line the pan with parchment.
