July Fruit & Jello Cups are a colorful, fun, and refreshing dessert featuring layers of red and blue gelatin with fresh fruit and whipped topping, perfect for patriotic summer celebrations.

Ingredients

  • 1 (3 oz) box strawberry or cherry Jell-O
  • 1 (3 oz) box berry blue Jell-O
  • 2 cups boiling water (1 cup per Jell-O flavor)
  • 2 cups cold water (1 cup per Jell-O flavor)
  • 1 cup chopped strawberries
  • 1 cup blueberries
  • Whipped cream or whipped topping, for serving
  • Fresh mint leaves (optional, for garnish)
  • 8 small clear plastic cups or dessert cups

Instructions

  1. Prepare the strawberry or cherry Jell-O by mixing it with 1 cup boiling water. Stir until dissolved, then add 1 cup cold water. Pour evenly into the bottom of the cups, filling halfway. Chill for 1–2 hours until set.
  2. Once the red layer is set, add a layer of chopped strawberries over it.
  3. Prepare the berry blue Jell-O using the same method (1 cup boiling water + 1 cup cold water). Let it cool to room temperature.
  4. Pour the blue Jell-O gently over the strawberry layer, filling the rest of the cup. Add blueberries into the blue Jell-O.
  5. Chill for another 2 hours, or until fully set.
  6. Before serving, top with whipped cream and garnish with fresh mint if desired.

Notes

  • Use clear cups to show off the colorful layers.
  • Chill each layer thoroughly before adding the next to prevent mixing.
  • Can be made a day ahead and kept in the fridge until serving.
