1 (3 oz) box strawberry or cherry Jell-O
1 (3 oz) box berry blue Jell-O
2 cups boiling water (1 cup per Jell-O flavor)
2 cups cold water (1 cup per Jell-O flavor)
1 cup chopped strawberries
1 cup blueberries
Whipped cream or whipped topping, for serving
Fresh mint leaves (optional, for garnish)
8 small clear plastic cups or dessert cups
Instructions
Prepare the strawberry or cherry Jell-O by mixing it with 1 cup boiling water. Stir until dissolved, then add 1 cup cold water. Pour evenly into the bottom of the cups, filling halfway. Chill for 1–2 hours until set.
Once the red layer is set, add a layer of chopped strawberries over it.
Prepare the berry blue Jell-O using the same method (1 cup boiling water + 1 cup cold water). Let it cool to room temperature.
Pour the blue Jell-O gently over the strawberry layer, filling the rest of the cup. Add blueberries into the blue Jell-O.
Chill for another 2 hours, or until fully set.
Before serving, top with whipped cream and garnish with fresh mint if desired.
Notes
Use clear cups to show off the colorful layers.
Chill each layer thoroughly before adding the next to prevent mixing.
Can be made a day ahead and kept in the fridge until serving.
