10 large eggs
1/2 cup heavy cream
1 lb ground breakfast sausage
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 cup chopped spinach
1/2 red bell pepper, diced
1/4 cup chopped green onions
1/2 tsp garlic powder
Salt and pepper, to taste
1 tbsp olive oil (for greasing the baking dish)
Instructions
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
In a skillet over medium heat, cook the sausage until browned. Drain excess fat and set aside.
In a large bowl, whisk together eggs, heavy cream, garlic powder, salt, and pepper.
Add cooked sausage, spinach, bell pepper, green onions, and cheeses to the egg mixture. Stir to combine.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 30-35 minutes, or until the center is set and the top is golden brown.
Let cool for 5 minutes before slicing and serving.
