Kielbasa Sausage Cheesy Potato Casserole is a rich and hearty baked dish made with smoky kielbasa, tender potatoes, and a creamy cheese sauce. It’s the ultimate comfort food perfect for family dinners or potlucks.

  • 1 pound kielbasa sausage, sliced into 1/4-inch rounds
  • 1 (30 oz) bag frozen diced or shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped green onions (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine sour cream, cream of chicken soup, milk, melted butter, garlic powder, salt, and pepper. Mix well.
  3. Add in thawed hash brown potatoes, kielbasa slices, and 1 1/2 cups of the cheddar cheese. Stir to combine.
  4. Transfer the mixture to the prepared baking dish and spread evenly.
  5. Sprinkle the remaining 1/2 cup cheddar cheese on top.
  6. Bake uncovered for 45–50 minutes, until the casserole is hot and bubbly and the top is golden brown.
  7. Let rest for 5–10 minutes before serving. Garnish with green onions if desired.

  • Use smoked turkey kielbasa for a lighter version.
  • This casserole can be assembled ahead and baked later—just cover and refrigerate up to 24 hours.
