Lasagna Roll-Ups are a fun twist on traditional lasagna, featuring pasta sheets rolled with a rich ricotta filling, topped with marinara and melted cheese.

Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 tablespoon chopped fresh parsley (or 1 tsp dried)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13 inch baking dish with cooking spray.
  2. Cook lasagna noodles according to package instructions. Drain and lay flat on a baking sheet.
  3. In a bowl, mix ricotta, egg, 1 cup mozzarella, Parmesan, parsley, Italian seasoning, salt, and pepper.
  4. Spread 2 tablespoons of the ricotta mixture on each noodle and roll tightly.
  5. Spread 1/2 cup of marinara sauce on the bottom of the baking dish.
  6. Place roll-ups seam-side down in the dish and cover with remaining marinara sauce.
  7. Sprinkle remaining 1/2 cup mozzarella over the top.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
  9. Let cool slightly before serving.

Notes

  • Use oven-ready noodles to save time—no boiling required.
  • Add cooked ground beef or spinach to the ricotta mixture for variation.
  • Can be assembled ahead of time and refrigerated until ready to bake.
