Lavender Honey Crunch Cookies are delicate and aromatic treats infused with floral lavender and sweet honey, with a delightful crunch from a sugar topping or crisp edges. Perfect with tea or as an elegant dessert bite.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp dried culinary lavender, finely chopped
  • 2 tbsp coarse sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and granulated sugar until light and fluffy.
  3. Beat in honey, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and chopped lavender.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Sprinkle tops with coarse sugar for added crunch.
  8. Bake for 10–12 minutes, or until edges are golden and centers are set.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Make sure to use culinary-grade lavender, not ornamental varieties.
  • Cookies can be stored in an airtight container for up to 5 days.
  • For extra crunch, bake a minute or two longer.
