Lavender Lemon Bars are a delightful twist on the classic lemon dessert, featuring a buttery shortbread crust and a tangy lemon filling infused with delicate floral notes from dried lavender. Perfect for spring gatherings or tea parties.

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tbsp dried culinary lavender
  • 2 large eggs
  • 3/4 cup granulated sugar (for filling)
  • 2 tbsp all-purpose flour (for filling)
  • 1/2 tsp baking powder
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a food processor, pulse together flour, sugar, butter, and lavender until mixture resembles coarse crumbs.
  3. Press mixture firmly into the bottom of the prepared baking dish to form the crust.
  4. Bake for 15–18 minutes or until lightly golden. Remove and set aside.
  5. In a bowl, whisk together eggs, sugar, flour, baking powder, lemon juice, and lemon zest until smooth.
  6. Pour the filling over the warm crust and return to oven.
  7. Bake for 20–25 minutes, or until the center is set and edges are lightly golden.
  8. Cool completely in the pan, then refrigerate for at least 1 hour.
  9. Dust with powdered sugar, slice into bars, and serve chilled or at room temperature.

Notes

  • Use only culinary-grade dried lavender to avoid bitterness.
  • Chill thoroughly before cutting for clean edges.
  • Bars can be stored in the refrigerator for up to 5 days.
