These Lazy Enchiladas are an easy and delicious twist on the classic dish.   • 1 can (10 oz) red or green enchilada sauce
  • 1 1/2 cups shredded cheese (Mexican blend, cheddar, or Monterey Jack)
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro, diced tomatoes, or sliced jalapeños

Instructions

1. Preheat the Oven:

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

2. Assemble the Enchiladas:

  1. Arrange the frozen taquitos in a single layer in the prepared baking dish.
  2. Pour the enchilada sauce evenly over the taquitos, ensuring they are well coated.
  3. Sprinkle the shredded cheese evenly on top.

3. Bake:

  1. Cover the dish with foil and bake for 15 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the taquitos are heated through.

  • Air Fryer Option: Heat the taquitos in an air fryer at 375°F (190°C) for 8-10 minutes, then assemble with sauce and cheese and bake in the oven for 10 minutes to melt the cheese.
