Lazy lasagna casserole is all the comfort of classic lasagna without the layering or extra prep. Made with pasta, ground beef, marinara sauce, and plenty of cheese, this one-pan wonder is perfect for busy weeknights or feeding a hungry family. It’s rich, cheesy, and super satisfying!
12 oz uncooked pasta (like rotini, penne, or bowtie)
1 tablespoon olive oil
1 lb ground beef (or Italian sausage)
1 small onion, diced
2 cloves garlic, minced
3 cups marinara sauce (store-bought or homemade)
1/2 teaspoon Italian seasoning
Salt and pepper, to taste
1 cup ricotta cheese (or cottage cheese)
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley, for garnish (optional)
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
Cook pasta according to package directions until just al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add ground beef and onion. Cook until meat is browned and onion is soft. Drain excess grease.
Stir in garlic, marinara sauce, Italian seasoning, salt, and pepper. Simmer for 3–5 minutes.
In a large bowl, combine cooked pasta, meat sauce, and ricotta. Mix gently until well combined.
Pour half of the pasta mixture into the baking dish. Top with half the mozzarella and Parmesan.
Add the remaining pasta mixture, then top with the rest of the mozzarella and Parmesan.
Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes, until cheese is melted and bubbly.
Let rest for 5 minutes before serving. Garnish with chopped basil or parsley if desired.
Swap ricotta for cottage cheese for a lighter option.
Add spinach, mushrooms, or zucchini for extra veggies.
Can be assembled ahead and baked later.
