These lemon brownies are a citrus lover’s dream! They’re soft, chewy, and bursting with zesty lemon flavor. Topped with a tangy lemon glaze, they’re a bright and refreshing twist on classic brownies, perfect for any occasion.

For the lemon brownies:

  • 1/2 cup (115 g) unsalted butter, melted
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3/4 cup (95 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the lemon glaze:

  • 3/4 cup (90 g) powdered sugar
  • 1 1/2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) baking pan or line it with parchment paper for easy removal.
  2. Make the brownie batter:
    • In a mixing bowl, whisk together the melted butter and granulated sugar until smooth. Add the eggs, lemon juice, and lemon zest, whisking until well combined.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, mixing until just combined.
  3. Bake the brownies:
    • Pour the batter into the prepared pan and smooth the top with a spatula.
    • Bake for 20–25 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs (not wet batter). Avoid overbaking to keep them chewy.
    • Let the brownies cool completely in the pan before adding the glaze.
  4. Prepare the lemon glaze:
    • In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Adjust the consistency by adding more powdered sugar for a thicker glaze or more lemon juice for a thinner glaze.
  5. Glaze the brownies:
    • Spread the glaze evenly over the cooled brownies. Let the glaze set for 10–15 minutes before slicing into squares.
  6. Serve and enjoy:
    • Slice into 9 or 12 squares and serve. Store leftovers in an airtight container at room temperature for up to 3 days.


Notes

  • For extra zing, add an additional tablespoon of lemon juice or zest to the batter.
  • Substitute lime juice and zest for a fun variation.
  • These brownies can be stored in the refrigerator for a firmer texture.
