Lemon Cooler Cookies are soft, zesty cookies coated in powdered sugar with a refreshing lemon flavor. Reminiscent of the nostalgic store-bought variety, these cookies are perfect for springtime treats or holiday cookie trays.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, powdered sugar, and granulated sugar until light and fluffy.
  3. Mix in lemon zest, lemon juice, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until a soft dough forms.
  5. Roll dough into 1-inch balls and place on the prepared baking sheet about 2 inches apart.
  6. Bake for 10–12 minutes, or until edges are just golden. Do not overbake.
  7. Allow cookies to cool slightly, then roll them in powdered sugar while still warm.
  8. Let cool completely and roll in powdered sugar again for a thick coating.

Notes

  • Store in an airtight container for up to 1 week.
  • For a stronger lemon flavor, add 1/4 tsp lemon extract to the dough.
  • Cookies can be frozen before or after baking.
  • Re-roll in powdered sugar just before serving for a fresh appearance.
