This lemon fluff dessert is an easy, no-bake treat made with fluffy whipped topping, lemon Jell-O, crushed pineapple, and mini marshmallows. It’s cool, creamy, and just the right amount of sweet and tangy. Perfect for potlucks, holidays, or a simple weeknight dessert.

  • 1 (3 oz) box lemon Jell-O

  • 1 cup boiling water

  • 1 (8 oz) package cream cheese, softened

  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed

  • 1 (20 oz) can crushed pineapple, drained

  • 2 cups mini marshmallows

  • 1 tablespoon lemon juice

  • Optional: lemon zest for garnish

Instructions

  1. In a medium bowl, dissolve lemon Jell-O in boiling water. Stir well and let it cool slightly (about 10–15 minutes).

  2. In a large mixing bowl, beat softened cream cheese until smooth.

  3. Slowly mix the cooled lemon Jell-O into the cream cheese until well blended.

  4. Fold in whipped topping, drained pineapple, lemon juice, and mini marshmallows.

  5. Pour the mixture into a 9×13-inch dish or individual serving cups.

  6. Chill in the refrigerator for at least 2 hours or until set.

  7. Garnish with lemon zest before serving, if desired.

Notes

  • You can substitute lime Jell-O for a tangy twist.

  • For extra texture, add chopped walnuts or crushed graham crackers on top.
