  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice

  • 12 ounces rigatoni pasta
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside.
  2. Season chicken pieces with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden and cooked through, about 5-6 minutes.
  4. Add minced garlic and sauté for 1 minute until fragrant.
  5. Stir in lemon zest and lemon juice, tossing to coat the chicken. Remove from heat and set aside.
  6. In a separate pan, melt butter over medium heat. Stir in heavy cream and bring to a simmer.
  7. Add Parmesan cheese and black pepper, stirring until the sauce thickens slightly.
  8. Toss cooked rigatoni in the Parmesan cream sauce until well coated.
  9. Serve creamy rigatoni topped with lemon garlic chicken bites and garnish with parsley if desired.
